Pea Puree
10 oz. Peas
5 oz. Tofu
1 Tbsp White Soy

5 oz. Rockfish 

Sautéed Components
Morel Mushrooms

Fingerling Potatoes
3 Fingerling potatoes
Soy Bean Oil

Dehydrated Soy Beans
Pea Shoots

Step 1
Pea Puree
Blanch the peas and shock in ice water when cooked.

Put in strainer and drain until moisture is removed.

Press tofu for 3 hours with weights in a strainer to remove excess moisture.

Combine all ingredients and place in a Vitamix or blender.

Step 2
Lightly salt and let it cure overnight.

Step 3
Sauté components
Sauté morel mushrooms and peas in a pan at high heat with a little bit of salt.

Step 4
Fingerling potatoes
Put in a metal container and make sure the soy bean oil is covering the potatoes.

Cook in oven at 250 for 3 hours. {Can use this oil for other uses, so don't throw it away.}

Step 5
Garnish Top off after tossing in sesame oil.
