Garlicky Green Bean Fries

Green Bean Fries

Ingredients

  • 1 lb. green beans, washed, dried and ends trimmed
  • 3 TBSP flour
  • 1½ C corn flakes, crushed to a bread crumb consistency
  • 1 TBSP olive oil
  • 1¾ tsp garlic salt
  • 2 eggs, beaten
  • ¼ C grated parmesan cheese

Directions

  1. Preheat oven to 425°. Line a rimmed cookie sheet with parchment paper and set aside.
  2. In a small bowl, combine the cornflakes and parmesan cheese with a fork.
  3. Place the green beans in a large bowl and toss with the olive oil until evenly distributed. Sprinkle the salt atop the green beans and toss or stir to distribute. Sprinkle the flour atop the salted beans and stir with a fork distribute. Pour the beaten eggs atop the floured bean and stir gently with a fork until the eggs are evenly distributed. Shake the cornflake/parmesan mixture atop the egg-covered bean and toss or stir gently until the beans are coated.
  4. Spread the green beans on the cookie sheet, making sure to spread apart any groups of beans that have stuck together. Bake in the preheated oven for 10-12 minutes, until golden brown and crispy. Remove from the oven and serve immediately.

Roasted Garlic Dipping Sauce

Ingredients

  • ½ C sour cream
  • 1 head of garlic, roasted
  • 3 TBSP lemon juice
  • ¼ tsp pepper
  • ½ C mayonnaise
  • 2 TBSP grated parmesan cheese
  • ¼ tsp salt

Directions

  1. Blend all ingredients to combine and pour into a serving dish.
