Overnight Yeasted Waffles

Ingredients

  • 5 C water, luke-warm
  • 1/3 C butter, melted
  • 1½ tsp salt
  • ¼ C brown sugar
  • 3 C whole wheat flour, sifted
  • 2 C all-purpose flour, sifted
  • 1 packet active dry yeast
  • 3 eggs, whisked
  • 1 tsp baking soda

Directions

  1. In a large mixing bowl, whisk water, butter, salt and brown sugar until thoroughly combined. Add whole wheat flour and all-purpose flour and whisk till combined. Sprinkle yeast atop the batter and mix with a wooden spoon until just incorporated. Cover with a lid or plastic wrap and let rest overnight.
  2. The next morning, preheat a waffle iron to your desired temperature. Remove the covering from the bowl and mix the eggs into the batter until thoroughly combined. Add the baking soda to batter and mix briefly. Spray the waffle iron with non-stick cooking spray, ladle the appropriate amount of waffle batter, and cook the waffles according to the manufacturer’s instructions.
