Ingredients

  • 3 cups pre-cooked red potatoes, thinly sliced, seasoned and grilled in oil
  • 1 tablespoon minced garlic
  • 1/2 cup diced red onion
  • 1/2 cup button mushrooms
  • 1/2 cup diced roma tomatoes
  • 1/2 cup chopped broccoli florets
  • 2 cups baby spinach
  • Garnish: Feta and mozzarella cheese

Directions

  1. Heat a little oil in a hot skillet with garlic. Once hot, add all vegetables and sauté until tender. Scoop potatoes onto plate, top with vegetable mixture and add feta and mozzarella cheese.
