Ingredients

  • 1 cup mixed Lentils
  • 1 cup Butter
  • 1 Egg
  • 1 cup Brown Sugar
  • 1 cup Whole Wheat Flour
  • 1 tsp Baking Soda
  • 1 tsp Vanilla
  • 1 cup Quick Rolled Oats
  • 1 cup Pecans, chopped
  • 1 cup Chocolate Chips

Directions

  1. Cook the lentils in boiling water for 25 - 30 minutes (until soft). Strain lentils and crush with fork. Preheat oven to 375 degrees. Grease cookie sheet or line with parchment paper.
  2. In a bowl, cream the crushed lentils, butter, and brown sugar together, and then add the egg and blend. Add the flour, baking soda, and vanilla. Stir in the oats, pecans, and chocolate chips. Stir well.
  3. Drop cookies by the spoonful onto prepared baking sheet and flatten. Bake cookies for 13 to 18 minutes. Allow to cool on a baking rack.
