Poached Pear Almond Tart
Poached Pears
Ingredients
- 4 peeled pears … cut in half (8 portions)
- 1 bottle white wine
- 1 c white sugar
- 1 stick of cinnamon
Directions
- Combine all ingredients except pears in sauce pan. Simmer until sugar is dissolved and add pears. Continue to simmer for 30 minutes. After you remove the pears, continue to simmer mixture to cook down to glaze.
Crust
Ingredients
- One 11 inch pastry shell (1 pound pastry crust)
Place in Food Processor
Ingredients
- 2 cups toasted almonds
- 1 cup white sugar
- 2 tbsp. flour
Directions
- Process until finely ground.

Ingredients
- 1 cup butter
- 2 eggs (place eggs in separate bowl prior to adding them into Cuisinart to ensure no shells)
- 2 tsp. almond extract
- 2 tsp. real vanilla
- 2 tbsp. rum
Directions
- Process until smooth & creamy. Spread almond paste evenly in the 11 inch pastry crust in a fluted pan. Top with sliced pears.
- Bake at 350° for 1 hour 5 minutes in the oven. Glaze with apricot jelly or reduce wine to make a glaze.
