Korean Inspired Beef Sushi Rolls
You will also need:
- White sushi rice, cooked and cooled
- Bean sprouts
- Spinach
- Nori
Korean Beef Roast
Ingredients
- 3 lb. boneless beef roast (chuck, rump or bottom round)
- ¼ C soy sauce
- 2 TBSP rice vinegar
- 2 TBSP brown sugar
- 1½ TBSP ginger, minced
- 5 cloves garlic, minced
- 1 TBSP sesame oil
- 2 tsp Worcestershire sauce
- ½ tsp Sriracha
- 2 TBSP canola oil
- Salt & pepper
- 1 red onion, cut into 6-8 wedges
- 3 TBSP toasted sesame seeds
- ½ C green onions, thinly sliced
Directions
- Whisk the soy sauce through Sriracha and pour into a gallon-sized zip top bag. Add the roast to the bag and massage it to spread the marinade all around. Allow the roast to marinade overnight.
- The next day, heat the canola oil over medium-high heat in a large saucepan. Remove the roast from the marinade, sprinkle all sides well with salt, and place in pan. Brown each side of the roast for 2 minutes and then place roast in a crock pot. Place the onion wedges on the sides of the roast and pour the remaining marinade atop the roast.
- Cook on low for 8 hours, until the beef shreds easily with a fork. Remove the roast from the crockpot and shred. Return the shredded beef to the crockpot, add the sesame seeds and green onions and mix well, allowing the beef to soak up the marinade and juices.
Spicy Date Fusion Sauce
Ingredients
- 10-12 medjool dates, pitted and halved
- 4 garlic cloves, peeled
- ¼ C tomato paste
- 2 TBSP rice vinegar
- 2 TBSP soy sauce
- 1 tsp chili garlic sauce
- 1 tsp sesame oil
Directions
- Place the dates in a small saucepan and cover with water to ½“ above the dates. Bring to a boil over medium heat, reduce the heat to low and simmer for 5-10 minutes, until the dates are soft. Using a fork, remove enough of the softened dates to give you ½ C of packed dates. Chop garlic in a food processor. Add the cooked dates and all other ingredients to the food processor with the garlic. Process until smooth.
Sesame Carrots
Ingredients
- 4 carrots, peeled
- 2 tsp sesame oil
- Salt & Pepper
Directions
- Grate carrots coarsely and toss with sesame oil. Season with salt and pepper to taste.
