Rockfish with Fingerling Potatoes with Pea Puree
For Garnish, you will also need:
Dehydrated Soy Beans
Pea Shoots
Garnish after tossing in sesame oil.
Pea Puree
Ingredients
- 10 oz. Peas
- 5 oz. Tofu
- 1 Tbsp White Soy
Directions
- Blanch the peas and shock in ice water when cooked.
- Put in strainer and drain until moisture is removed.
- Press tofu for 3 hours with weights in a strainer to remove excess moisture.
- Combine all ingredients and place in a Vitamix or blender.
Rockfish
Ingredients
- 5 oz. Rockfish
Directions
- Lightly salt and let it cure overnight.
Sautéed Components
Ingredients
- Morel Mushrooms
- Peas
Directions
- Sauté morel mushrooms and peas in a pan at high heat with a little bit of salt.
Fingerling Potatoes
Ingredients
- 3 Fingerling potatoes
- Soy Bean Oil
Directions
- Put in a metal container and make sure the soy bean oil is covering the potatoes.
- Cook in oven at 250 for 3 hours. {Can use this oil for other uses, so don't throw it away.}
