Watermelon Poke

  1. Dice half a watermelon into small squares
  2. Marinate in soy base, ginger, sesame oil and garlic (to taste)--make enough to only use half for marinating and set other half aside
  3. Cook marinated watermelon on flat pan at 400 degrees long enough to remove some water (add more marinade after cooking)
  4. Make green onion curls (cut thin slices and place in ice water bath--watch them curl!)
  5. Cook jasmine rice and make into ball
  6. Make ginger guacamole and add to plate with sliced carrots, pickled cucumbers and onions
  7. Add cooked watermelon to plate
  8. Spread remaining ginger poke marinade & sriracha aioli with black sesame seeds
