Watermelon Poke
Directions
- Dice half a watermelon into small squares
- Marinate in soy base, ginger, sesame oil and garlic (to taste)--make enough to only use half for marinating and set other half aside
- Cook marinated watermelon on flat pan at 400 degrees long enough to remove some water (add more marinade after cooking)
- Make green onion curls (cut thin slices and place in ice water bath--watch them curl!)
- Cook jasmine rice and make into ball
- Make ginger guacamole and add to plate with sliced carrots, pickled cucumbers and onions
- Add cooked watermelon to plate
- Spread remaining ginger poke marinade & sriracha aioli with black sesame seeds
