Cured Tomato Garden Salad

Ingredients

  • 2 quarts greens (arugula, kale, mache, spring mix etc.)
  • 1/4 c lemon vinaigrette
  • 1 c garden ranch
  • 1 c roasted cured tomatoes
  • 1/2 c cheese curds

Roasted Cured Tomatoes

Ingredients

  • 2 sliced green tomatoes
  • 1 pint cherry tomatoes sliced
  • 1/4 c canola oil
  • 2 c olive oil
  • Salt and pepper to taste

Directions

  1. Toss tomatoes in canola oil and seasonings
  2. Roast at 350 degrees for 5 minutes
  3. Cool and soak in olive oil (the longer they soak, the more flavorful they will be)

Lemon Vinaigrette

Ingredients

  • 1/2 c lemon juice
  • 1/4 c sugar
  • 2 c oil
  • 1 tsp dijon mustard
  • 1 tsp salt

Directions

  1. Combine all ingredients except for olive oil
  2. Slowly add in the oil by whisk continuously

Garden Ranch Dressing

Ingredients

  • 1/2 quart cream cheese
  • 1 c ranch dressing
  • 1 tbl salt
  • 1 tbl granulated garlic
  • 1 tbl granulated onion

Directions

  1. Add all ingredients to bowl and whisk until combined
  2. Assemble Salad: Toss greens in lemon vinaigrette. Place garden ranch on bottom of plate or bowl. Arrange greens on top of the ranch. Garnish with cured tomatoes and cheese curds.
