Melon Salad

  • ½ Watermelon and/or Cantaloupe - Oblique cut
  • 2 Cucumbers, quartered, seeded, and sliced thin
  • 2 Tablespoons chili lime seasoning (recommend Spiceology brand)
  • 1 Lime - Use juice and zest



  • 1/6th Avocado, diced small
  • 1oz of Cotija (feta), crumbled
  • 1 Tablespoon of Candied Pepitas (Recipe here)
  • .3oz Mint, chiffonade
  • .3oz Basil (or purple basil if available), chiffonade


  1. Combine all of the top section ingredients prior to service. Shelf life is 2 days, so try to do just enough for the day. Allow to macerate in the juices
  2. At plate up, toss salad with avocado and feta. Line neatly on a rectangle plate and top with candied pepita and fried purple basil
