Geoduck Clam Lemongrass Soup
Ingredients
- 1-2 Geoduck, cleaned and trimmed
- 2 cups no sodium chicken broth, veggie broth, or water
- 1-2 stacks lemongrass (using bottom side of lemon grass 7-9 inches, cut 1⁄2 inches slices)
- 5-6 sliced pieces of peeled ginger
- 1 tsp garlic minced (optional)
- 2-3 Kaffir lime leaves (optional)
- Washington grown veggies such as onions, bell peppers, carrots, etc.
- 2 TBSP fish sauce (if you are vegetarian use 1 TBSP Kosher salt instead of fish sauce)
- 2-3 TBSP fresh lime juice
- 1⁄4 TBSP sugar
Directions
- Bring your broth choice to a boil.
- Add lemongrass, garlic, ginger, and kaffir lime leaves.
- Add veggies and fish sauce (or Kosher salt if using), sugar, lime juice, then geoduck.
- Boil 1-2 more minutes; enjoy!
