French Onion Soup

Ingredients

  • 10 lbs - Julienne onion
  • 1 lb. Butter
  • 3 gallons water
  • 2 cups beef base
  • 1.5 cups Sherry
  • 2 TBSP Basil
  • 2 TBSP Worchester

Directions

  1. Melt butter – slowly cook onions until clear and just begin to brown.
  2. Add all other ingredients, simmer on low boil 15 minutes.
  3. Cool and store - Reheat and pour on baking dish, topped with toasted crouton and assorted cheeses to preference and broil until golden brown.
