French Onion Soup
Ingredients
- 10 lbs - Julienne onion
- 1 lb. Butter
- 3 gallons water
- 2 cups beef base
- 1.5 cups Sherry
- 2 TBSP Basil
- 2 TBSP Worchester
Directions
- Melt butter – slowly cook onions until clear and just begin to brown.
- Add all other ingredients, simmer on low boil 15 minutes.
- Cool and store - Reheat and pour on baking dish, topped with toasted crouton and assorted cheeses to preference and broil until golden brown.
