Rockfish with Fingerling Potatoes with Pea Puree

For Garnish, you will also need:

Dehydrated Soy Beans
Pea Shoots

Garnish after tossing in sesame oil.

Pea Puree

Ingredients

  • 10 oz. Peas
  • 5 oz. Tofu
  • 1 Tbsp White Soy

Directions

  1. Blanch the peas and shock in ice water when cooked.
  2. Put in strainer and drain until moisture is removed.
  3. Press tofu for 3 hours with weights in a strainer to remove excess moisture.
  4. Combine all ingredients and place in a Vitamix or blender.

Rockfish

Ingredients

  • 5 oz. Rockfish

Directions

  1. Lightly salt and let it cure overnight.

Sautéed Components

Ingredients

  • Morel Mushrooms
  • Peas

Directions

  1. Sauté morel mushrooms and peas in a pan at high heat with a little bit of salt.

Fingerling Potatoes

Ingredients

  • 3 Fingerling potatoes
  • Soy Bean Oil

Directions

  1. Put in a metal container and make sure the soy bean oil is covering the potatoes.
  2. Cook in oven at 250 for 3 hours. {Can use this oil for other uses, so don't throw it away.}
