Mint Popcorn

Ingredients

  • 1/3 C popcorn kernels
  • ½ C sugar
  • ¼ tsp salt
  • 1/8 tsp peppermint oil
  • ¼ C unsalted butter
  • 2 TBSP corn syrup
  • ¼ tsp baking soda
  • 1/8 tsp green food coloring

Directions

  1. Spray a 9 x 13” pan with nonstick cooking spray and set aside. Using an air popper, pop the popcorn kernels into a large stainless steel or glass bowl and set aside.
  2. In a small stockpot, melt the butter over low heat. Increase the heat to medium, add the sugar, corn syrup, and salt and stir constantly with a metal spoon until the mixture begins to boil. Allow the mixture to boil, untouched for 3 minutes.
  3. Remove from the heat and immediately add the baking soda, peppermint oil, and green food coloring. Working quickly and carefully so as to not allow the hot candy syrup to cool and harden, pour the warm syrup atop the popcorn and use a large, long-handled metal spoon to mix gently, distributing the syrup amongst the popcorn.
  4. Pour the candy-coated popcorn evenly into the prepared 9 x 13” pan and microwave for 45 seconds. Remove from the microwave and again work swiftly and carefully to gently stir and further distribute the candy syrup. Return the pan to the microwave for another 30 seconds. Remove, gently stir, and allow the popcorn to cool completely. Serve.
