Beet Salad
Ingredients
- Torpedo beets, peeled and sliced into cubes
- Yellow beets, peeled and sliced into cubes ( =roasted off in citrus zest with lemon and warming spices.)
- Fermented beets, thinly sliced
Gremolata
Ingredients
- Pistachios, chopped
- Mint, chopped
- Zest of lime, lemon and blood orange
- Garlic, chopped
- Olive oil
Directions
- Combine all ingredients in a bowl, set aside
Beet Vinaigrette
Ingredients
- Salt
- Oil
- Juice of blood orange
Directions
- Put beets in a bowl and toss with vinaigrette
- Start building the salad by spreading cooked blood orange zest and smoked yogurt onto the plate.
- Place beets and top them with the gremolata, onion flowers and microgreens. Enjoy!
