Ingredients

  • Torpedo beets, peeled and sliced into cubes
  • Yellow beets, peeled and sliced into cubes ( =roasted off in citrus zest with lemon and warming spices.)
  • Fermented beets, thinly sliced

Gremolata

Ingredients

  • Pistachios, chopped
  • Mint, chopped
  • Zest of lime, lemon and blood orange
  • Garlic, chopped
  • Olive oil

Directions

  1. Combine all ingredients in a bowl, set aside

Beet Vinaigrette

Ingredients

  • Salt
  • Oil
  • Juice of blood orange

Directions

  1. Put beets in a bowl and toss with vinaigrette
  2. Start building the salad by spreading cooked blood orange zest and smoked yogurt onto the plate.
  3. Place beets and top them with the gremolata, onion flowers and microgreens. Enjoy!
