Reunion Malaysian Cafe Potato Curry

Vegetables Needed

Ingredients

  • 4-5 Good size russets (diced)
  • One carrots (julienne)
  • One red onion or shallots (diced)
  • 2 Roma tomatoes (diced)
  • Half Red and Green bell peppers (julienne)

Blended Curry Paste

Ingredients

  • Half a cup of oil
  • 20 cloves of garlic
  • 2 stalks of lemongrass (finely chopped)
  • 2 cm of fresh ginger
  • 2 cm of fresh galangal
  • 1 oz of dried chili (soaked & deseeded)
  • 5 pcs of fresh red chili
  • One pinch of salt

Directions

  1. Make homemade curry paste by blending together all paste ingredients. Set aside to use in the assembly of the curry.

Spices

Ingredients

  • 2 pcs of Bay leaves
  • 1 teaspoon of coriander
  • 1 teaspoon of cumin
  • 3 pieces of Cardamom
  • 5 pieces of cloves
  • 1 tablespoon of Ginger powder
  • 1 tablespoon of Turmeric
  • 1 tablespoon of Cayenne pepper
  • 2 tablespoons of Curry powder
  • Salt to taste

Assembling the Curry

Ingredients

  • Two cups of Vegetable broth
  • Half cup of coconut milk

Directions

  1. In a large pot, sauté red onions, shallots, garlic & ginger.
  2. Stir in spices.
  3. Add blended curry paste.
  4. Stir in 2 cups vegetable broth.
  5. Add red and green bell peppers, carrots, tomatoes, and potatoes.
  6. Simmer for 15 minutes.
  7. Stir in coconut milk, serve, and enjoy!
