Reunion Malaysian Cafe Potato Curry
Vegetables Needed
Ingredients
- 4-5 Good size russets (diced)
- One carrots (julienne)
- One red onion or shallots (diced)
- 2 Roma tomatoes (diced)
- Half Red and Green bell peppers (julienne)
Blended Curry Paste
Ingredients
- Half a cup of oil
- 20 cloves of garlic
- 2 stalks of lemongrass (finely chopped)
- 2 cm of fresh ginger
- 2 cm of fresh galangal
- 1 oz of dried chili (soaked & deseeded)
- 5 pcs of fresh red chili
- One pinch of salt
Directions
- Make homemade curry paste by blending together all paste ingredients. Set aside to use in the assembly of the curry.
Spices
Ingredients
- 2 pcs of Bay leaves
- 1 teaspoon of coriander
- 1 teaspoon of cumin
- 3 pieces of Cardamom
- 5 pieces of cloves
- 1 tablespoon of Ginger powder
- 1 tablespoon of Turmeric
- 1 tablespoon of Cayenne pepper
- 2 tablespoons of Curry powder
- Salt to taste
Assembling the Curry
Ingredients
- Two cups of Vegetable broth
- Half cup of coconut milk
Directions
- In a large pot, sauté red onions, shallots, garlic & ginger.
- Stir in spices.
- Add blended curry paste.
- Stir in 2 cups vegetable broth.
- Add red and green bell peppers, carrots, tomatoes, and potatoes.
- Simmer for 15 minutes.
- Stir in coconut milk, serve, and enjoy!
